holiday party prep :: jicama slaw with avocado and lime.
1 large Jicama
2 Just ripe avocados
1 Lime
salt
pepper
chile powder
olive oil
Using a mandoline (or knife), slice jicama into match-sized strips. In a bowl, combine jicama strips, juice from lime, a few pinches of salt, pepper, and 1/2 t of chile powder. Add 2 T of olive oil and toss. Quarter avocados, remove pit, and cube. Add avocado to jicama mixture and toss again. Serves 8 as a side.
